DDR sounds more like an arcade game and DS just implies that "oh no it's such a girly game!"

I might be wrong but in katakana it would more often be suteiji as opposed to suteeji because Japanese don't tend to write two vowels the same to elongate a word. for example they use ou instead of oo.
I definitely prefer DDR over DS. I never understand why companies insist on changing names for Europe.

I think it's because of a Dancemania licensing contract where games called Dance Dance Revolution could get the songs free by having an advert for Dancemania albums in the demo loop. Dancing Stage didn't have the advert(s), But they have to pay the royalties to EMI (which is why DS machines have a hefty price tag)

Odd, I was to understand it was due to the Dancemania licence but Konami wanted to use songs from companies other than Dancemania for Europe but the contract didn't allow them to for Dance Dance Revolution, but by changing the name to Dancing Stage and marketing it as a different game they could?
Also two mixes exclusive to Japan came out under the name Dancing Stage. I think it was one with songs from True Kiss Destination and another with a different artist.

You are. Whilst in hiragana it is quite rare to see a long "e", in katakana it is not uncommon (e.g. ステーキ- suteeki (Steak)).
Jim Breen's excellent WWWJDIC provides "ステージ" as the translation of "stage" in Katakana, too.

DDR. It's the more popular term for Konami's dance game, which is one of the reasons why it was popular in my country.

Tis correct. The thing about the 'attract screen' adverts is correct, too.

Any DDR arcade machine that includes songs from a 3rd party (outside of Dancemania and Konami) has to be sold under the 'Dancing Stage' name. Some of them (specificaly Euromix 1) also use the slogans 'Dance Dance Revolution' and 'DDR' in-game.
There's some speculation of whether the deal is still in place, as SuperNOVA 2 uses a surprisingly low ammount of songs from Dancemania, and has a deal to license music from Happyhardcore.com, as well as several other 3rd parties. All the licensed songs are listed as 'Konami Original' music, though. Possibly to get around the licensing deal?
